The texture here too is just so, so good; it’s a terrific example of how less is oftentimes more. And then there’s the finish, which really flies out there and beyond. Brightly alive. Lush and flourishing. Verdure is word used by Tasmania’s early explorers to describe the beauty of the landscape they were discovering.
100% Sauvignon Blanc grown on Devonian granite soils near St Helens on the North-East coast of Tasmania. Handpicked on 17 April 2021. Destemmed and oxidatively handled at pressing. Partial solids ferment in old French oak puncheons with complete malolactic fermentation. Six months in oak on lees with occasional stirring.
